When I travel one of my first priorities is to explore local markets, whether in a covered hall or open air. They are a great way to capture a sense of the pace, food culture and vibrant colors of the setting. They are also on occasion quite visceral, especially outside the US. I don't hold back on those subjects, as they are part of the authenticity of the scene.
